How to franchise a restaurant

Six stages, in sequence. Brands that jump to stage four because a buyer appeared are the ones that end up rewriting the system after the first franchisee opens.

    Validate the unit economics

    Profitable in more than one location, with margins that survive after a royalty is added. A franchisee has to earn a living after paying you. If the model only works when the founder is the labor, it is not ready, and no amount of documentation fixes that.

    Document the operating system

    Operations manual, recipe specifications, opening and closing procedures, manager certification, quality standards, technology stack and reporting. The test is whether a competent stranger could run the store from what is written. This stage takes the longest and is the one most often shortchanged.

    Design the franchise model

    Initial fee, ongoing royalty, marketing fund, territory definition, development schedules, site criteria, and what support the franchisor actually commits to deliver. These decisions determine who you attract and whether the system is sustainable at fifty units, not just at five.

    Your franchise attorney prepares the Franchise Disclosure Document, the franchise agreement, and any Item 19 financial performance representation, and handles state registrations. Common questions

How do you franchise a restaurant?

Franchising a restaurant follows six stages: validate that the unit economics work in more than one location, document every operating system so a stranger can run the store, design the franchise model including fees, royalties and territory, prepare the Franchise Disclosure Document with qualified franchise counsel, build the sales and marketing infrastructure to recruit qualified owners, then support franchisees through training, opening and ongoing performance. Skipping the documentation stage is the most common and most expensive mistake.

How much does it cost to franchise a restaurant concept?

Costs vary widely by concept and state registration requirements, and fall into four categories: legal work to prepare the Franchise Disclosure Document and agreements, consulting and documentation work to build the operating and training systems, brand and marketing assets for franchise recruitment, and the internal staffing or support capacity to serve franchisees once they open. Budget the support capacity honestly, because it is the cost brands most often underestimate.

What are typical franchise fees and royalties?

An initial franchise fee is paid once for the right to open a unit in a defined territory, and an ongoing royalty is paid as a percentage of gross sales in exchange for continued brand use and support. Many systems also collect a marketing or brand fund contribution. The right numbers for a specific brand depend on unit economics, the level of support provided, and what comparable concepts charge, and they must be disclosed in the Franchise Disclosure Document prepared by counsel.
